2-4 cloves garlic; 1 raw egg yolk; 2 tbsp lemon juice; 1 cup olive oil; salt


Peel the garlic and crush it with a knife before grinding it with a pestle and mortar with some coarse salt. Add and mix it with the egg yolk and then pour in 1 tsp of oil at a time in a thin stream, whisking until the sauce thickens. Once 2 tbsp oil have been added in this way add the lemon juice and then the oil 1 tsp at a time until it has all been combined. Chill and serve with fish, seafood, bread and vegetables.
