4 ramiro peppers; a dozen anchovies in oil; 1 clove garlic; 0.5 tsp sugar; 1 tsp sherry vinegar; salt, black pepper

A grilled pepper and anchovy starter

Roast the peppers on a naked flame or in the oven until the skins blacken. Place them in a plastic bag or bowl with a lid and leave to stand for 15 minutes. Remove the skins and retain the juice. Using your hands, break the peppers up and reheat them in a frying pan with the garlic in oil. Season with salt and pepper, add the sugar and vinegar. Leave to cool and mix with the anchovies. Serve as a starter on slightly dry pieces of bread accompanied by wine.
